tomato, basil & cheddar soup

hands down the best soup EVER!
this tastes JUST LIKE THAT, which i absolutely love!!!

i got the inspiration to make this from, non other than, joanna goddard from a cup of jo. she posted the link on her facebook & my mouth watered just from looking at the picture of the thick, tomato bisque. that's when i knew i had to make it for dinner. stat.

i went out and bought some of the ingredients i didn't already have at home & got to work.
it was really easy to make, besides the blending part....my blender didn't handle that too well & some of the soup exploded all over my cabinets. ha!

anyways, if any of you are looking for a yummy fall recipe, try this soup & pair it with a small side sandwich or just some fresh french bread & some wine. everything is always better with wine  :)

ingredients: canned, diced tomatoes  1 white onion, 1 garlic clove, 1 cup of shredded cheddar cheese, 1 cup of vegetable broth (mix 1 tbs broth with 1 cup of boiling water), 1 package of plain greek yogurt, some oregano, half a cup of shredded fresh basil, 1 tsp of sugar and salt & pepper (also! 1 tbs olive oil- not pictured)


chop the onion & garlic and heat on medium fire with 1 tbs olive oil.
(i only used half of my onion because it was really big, but its your personal preference on how much to use)
cook onion & garlic for about 3-4 minutes until tender
add in the canned, diced tomatoes (juice, too!), the 1 cup of vegetable stock, oregano, basil, sugar, salt & pepper & put the lid on the pot and let simmer for 10 minutes
add the package of green yogurt & cup of cheddar cheese and mix very well.
then, you pour into your mixer or blender to get to the right consistency.
you can make it cute by serving with some shredded cheddar on top & some little basil leaves :)
